Stop by the registered dietitians office to discuss how we can meet your dining needs, learn about our resources and more. Our office is located in Jester West on the first floor, room A102.
Virtual Meetings
Current and prospective students with dietary needs can request support from the registered dietitians through virtual meetings. In these meetings, our registered dietitians help students make nutrition decisions based on their individual needs when eating in our dining halls.

Meet the Team
Breanna Esbenshade

Breanna Esbenshade is a UHD registered dietitian with expertise in specialized menus, student programming, recipe development and allergen labeling. She also facilitates campus outreach and assists students with menu and dining navigation.
Breanna has over four years of experience in food management, and received her bachelor’s degree in Health and Rehabilitation Sciences from The Ohio State University.
Her favorite dining hall meal is soup and a baked potato from J2 Dining because it reminds her of home-cooked meals she had while growing up.
Emily Shackleton

Emily Shackleton is a UHD registered dietitian who specializes in student programming, along with menu and recipe development. Additionally, she leads outreach to campus partners and supports students navigating dietary restrictions.
Emily has more than 10 years of experience in the nutrition field. She received her bachelor’s degree in Nutrition and Dietetics and holds a Master’s degree in Public Health from West Chester University.
Her favorite dining hall meal is a sandwich from the deli station at Jester City Limits because it is customizable with a variety of fresh ingredients.
Julia Lehle

Julia Lehle is a UHD registered dietitian with expertise in food service operations and management, menu development and dietary accommodations. Additionally, she specializes in food safety compliance, along with training and development.
Julia has over 12 years of experience and received her bachelor’s degree in Nutrition from Texas Woman’s University.
Her favorite dining hall meal is a grilled cheese with tater tots and tomato soup from J2 Dining because it is a comforting, delicious meal that includes various vegetables and deli options.
